We present the recipe for ORGANIC GLUTEN FREE COOKIES, made with our SpigaBuona Cake Mix, semi-wholemeal, with no added sugar and lactose-free, like all our SpigaBuona gluten-free flours.

These gluten free cookies are perfect for breakfast, to accompany a good coffee, tea or freshly squeezed orange juice.

INGREDIENTS

  • 300 g Spigabuona Cake Mix
  • 100 g Organic butter
  • 100 g Organic sugar
  • 1 pinch of salt
  • 1 Organic egg
  • 2 Organic egg yolks
  • Some Spigabuona rice flour (for dusting) to taste
  • Organic vanilla

PROCEDURE

In a bowl, work the cold butter, the sugar, the pinch of salt and the seeds of a vanilla bean with your hands until you obtain a sandy mixture which is not perfectly bound. Then add the eggs.

Finally, incorporate the Spigabuona Cake Mix bio avendo cura di non lavorare troppo l’impasto.

Coprire con pellicola trasparente e mettere a riposare in frigorifero per almeno un ora prima dell’uso.

Stendere la frolla così ottenuta con il mattarello, circa 5mm, aiutandosi con della farina di riso per lo spolvero e formare quindi i biscotti nella forma desiderata (la farina di riso non farà appiccicare l’impasto alle mani e al banco di lavoro).

Arrange them on a baking sheet and bake in a preheated oven at 180 degrees for about 20 minutes.
