The rediscovery of ancient grains is a winning card of Antico Molino Rosso. We propose a new line of organic flours derived from the grinding of Ancient Grains.
“Timilìa” durum wheat is an endangered variety typical of the centre of Sicily with very characteristic aromas and flavours. Its gluten index is one of the lowest and therefore very delicate. The result is a fragrant semolina with a particular and very digestible flavour.
