The rediscovery of ancient grains is an Antico Molino Rosso trump card. We propose a new line of organic flours derived from the milling of Grani Antichi.
An old variety of soft wheat native to central Tuscany, particularly widespread in Romagna as early as 1800 and gradually abandoned by 1925 when, with the start of the Battle of the Grain, agronomist and geneticist Strampelli introduced more productive wheat varieties. From the mid-1800s until the mid-1900s it accounted, together with Cappelli wheat, for about 70 percent of Italian grain production, precisely because of its nutritional characteristics, goodness and strong taste. Gentil Rosso has a significantly lower gluten content than modern soft grains.
