Ancient organic cereals

Biodiversity has led our company to become a leader in Italy on ancient cereals, thanks to the experimental organic soil around the company. Since 2007 we have been cultivating different plots of Ancient Grains every year. 

Organic flours from ancient cereals

From here, nationwide projects such as ‘Consemi’ were born. the seed house of which Antico Molino Rosso is a founding partner, inaugurated on 14 December 2020 with the presence of regional institutions.

And more: “Crescent”, established in 2011 from the collaboration between the N. Strampelli agricultural experimentation and genetics institute and the Veneto Short Chain of Ancient Cereals Association, of which Antico Molino Rosso is a partner and active part.

The union, since the sowing, of 7 ancient varieties, gave rise to Aurora, (whose name is synonymous with Origin). This flour is the flagship of the experimental field project of Antico Molino Rosso, in which, since 2007, many plots of Ancient Cereals are grown every year.

Old variety of soft wheat originally from central Tuscany, particularly popular and grown throughout national territory for 70% of the available land from the mid-1800s and through to 1925, when, with the start of the Battle for Grain, the agronomist and geneticist, Strampelli, introduced more productive wheat varieties.

Cappelli wheat takes its name from Senator Raffaele Cappelli, a nobleman who became famous for having introduced the reform that divided up the varieties of soft wheat from durum wheat.

Timilia durum wheat is a variety at risk of extinction, typical of central Sicily, with very characteristic aromas and flavours. Its gluten index is one of the lowest, making it very delicate, chosen by Mr Li Rosi.

THE NAME
Crescent takes its name from the “Fertile Crescent”, the region in the Middle East, between the rivers Tigris and Euphrates. This land was the first to give man our first cereals, through wild crops that grew spontaneously, approximately 15,000 years ago. 

THE BRAND
The Crescent trademark is a grain of wheat grown in the ground that, opening up towards the outside, forms an ear, which encompasses the short organic chain of the ancient cereals

Part of the Crescent Ancient Cereals organic short chain, it is a blend of ancient varieties of soft grain wheat. It stands out for its unique, original nature, being a population of cereals with numerous properties that each of the cereals, grown in the same land, brings with it, making this 180 blend a balanced product.

Facente parte della filiera corta Bio dei Cereali Antichi Crescent, Alicorno è il nome che è stato dato dalla filiera. Questa varietà si contraddistingue per le sue proprietà in particolare per le proteine che variano dal 16,5 al 18% ed una quantità elevata di carotenoidi.
