Our semi-wholemeal durum wheat pasta is obtained by mixing our stone-ground semolina from organic farming and water. The result of this mix is a proper traditional Italian pasta out of the ordinary, healthy and nutritious, handcrafted, slowly drawn bronze reaching a maximum temperature of 36 degrees and dried on wooden frames for 36 hours.
“Timilìa” durum wheat is an endangered variety typical of the centre of Sicily with very characteristic aromas and flavours. Its gluten index is one of the lowest and therefore very delicate. The result is a fragrant semolina with a particular and very digestible flavour.
