Recommendations for use:
direct dough, from 4 to 8 hours, using hydrations ranging from 70-80%, use from 2% to 4% of dried Antico Molino Rosso sourdough depending on the leavening time. Forming after the first leavening and decoration after the second rising, and then proceed to cooking.
