HOW TO MAKE PIZZA IN A PAN TYPE 1

  1. In a bowl, mix the flour with the water with the help of a wooden spoon.
  2. Help yourself with a spatula and clean the bowl and spoon well. Knead with your hands until you get a rough and not perfectly tied dough.
  3. Cover the bowl with a clean cloth and let it rest for about 15 minutes.
  4. Start kneading again, adding the salt and finally the oil.
  5. Turn the dough over on the table and knead it until all the ingredients are completely absorbed.
  6. With a food brush, lightly oil the bowl, place the dough on it and cover with cling film.
  7. Let it rise at room temperature until doubled.
  8. Rework the dough and proceed with the second leavening, thus favoring a softer dough and a more uniform leavening.
  9. Let it rise for about another 2-3 hours at room temperature until doubled
  10. Turn the dough over on a pastry board and roll out the pizza evenly, using the re-milled durum wheat semolina.
  11. Place the dough on a previously oiled baking sheet
  12. Prick the surface with a fork
  13. Sprinkle the whole pizza with tomato sauce
  14. Let it rise for about 2-3 hours
  15. Bake in a pre-heated oven at 250 ° C for about 10 minutes
  16. Season the pizza with mozzarella, basil and organic oil
  17. Cook again for another 4-5 minutes
