TYPE 1 PIZZA INGREDIENTS
- 400g Aida pizza flour type 1
- 250g water
- 10g of salt
- 15g extra virgin olive oil
- Organic tomato puree
- Organic basil
- Organic mozzarella
HOW TO MAKE PIZZA IN A PAN TYPE 1
- In a bowl, mix the flour with the water with the help of a wooden spoon.
- Help yourself with a spatula and clean the bowl and spoon well. Knead with your hands until you get a rough and not perfectly tied dough.
- Cover the bowl with a clean cloth and let it rest for about 15 minutes.
- Start kneading again, adding the salt and finally the oil.
- Turn the dough over on the table and knead it until all the ingredients are completely absorbed.
- With a food brush, lightly oil the bowl, place the dough on it and cover with cling film.
- Let it rise at room temperature until doubled.
- Rework the dough and proceed with the second leavening, thus favoring a softer dough and a more uniform leavening.
- Let it rise for about another 2-3 hours at room temperature until doubled
- Turn the dough over on a pastry board and roll out the pizza evenly, using the re-milled durum wheat semolina.
- Place the dough on a previously oiled baking sheet
- Prick the surface with a fork
- Sprinkle the whole pizza with tomato sauce
- Let it rise for about 2-3 hours
- Bake in a pre-heated oven at 250 ° C for about 10 minutes
- Season the pizza with mozzarella, basil and organic oil
- Cook again for another 4-5 minutes
