When we collaborators of Antico Molino Rosso in 2014 started research and development relating to gluten-free products, we started by analyzing and testing what was available on the market to create a database with all the ingredients of various consumer products.

First of all, the Quality Office found the presence of sugar, lactose, hydroxy-propyl-methylcellulose (chemical thickener E 464) on many Gluten Free references on the shelves of Modern Distribution.

It was spontaneous to ask – on the part of the team that followed the project – what the sugar and lactose were doing in the preparation for pizza, bread and pasta, knowing that the person suffering from celiac disease is very often also diabetic .

The answer was soon found when it was discovered that sugar has a significantly lower cost per kg than the other ingredients that make up the dedicated mixes.
