In the dough, in addition to the Mix for Pizza gluten free spigabuona we have added a few simple ingredients typical of Mediterranean cuisine, such as oil, oregano, cherry tomatoes and grated cheese, to give that unique flavour reminiscent of pizza margherita š

INGREDIENTS
- 120 g di Mix for Pizza gluten free Spigabuona
- 1 egg
- 100 g of cold water
- 30 g extra virgin oil
- 30 g grated cheeseĀ
- 8 g instant yeast
- cherry tomatoes
- 1 mozzarella
- oregano
- 5 g salt
PROCEDURE
In a large bowl, mix the Mix for Pizza gluten free Spigabuona with the instant cake yeast, oregano, grated cheese and salt. Add the water, egg and extra virgin olive oil. Mix well with a whisk or wooden spoon until the mixture is smooth. Dice the cherry tomatoes and crumble the mozzarella. Pour them into the mixture and mix.
Preheat the oven to 180Ā°C, rline the muffin tin with paper cups or grease them lightly with oil. Divide the dough into equal portions and fill each muffin mould cavity halfway.
Bake the muffins for 20-25 minutes and until golden brown. Allow them to cool slightly before removing them from the mould.
